Tomato Poached Cod

A healthy, easy and delicious way to poach fish. Tomatoes, garlic and thyme infuses into the moist fish flakes, giving you a fresh and pungent flavour to the fish.

Ingredients

  • 2 cod fillets

  • 1 tablespoon extra virgin olive oil

  • 1 yellow onion - chopped

  • 1 clove garlic - minced

  • 1 can crushed / diced tomatoes

  • 3 sprigs thyme

  • 1 tablespoon soy sauce

  • Salt & pepper to taste


Pre-heat oven to 360°F.


Place a medium saucepan over medium-high heat. Heat olive oil. Add onions and garlic and saute until translucent and soft.


Add tomatoes, soy sauce, thyme and season with salt and pepper. Simmer for 5-6 minutes.


Pour 3/4 of the tomato mixture into the bottom of a baking dish.


Season both sides of the cod fillets with salt and pepper, and place the fish on top of the tomato mix.


Cover the cod fillets with the remaining tomato mixture.

Cover the dish with tin foil and bake in the oven for 15 minutes. Uncover the dish, baste the fish with the tomato liquids, re-cover the dish and bake in the oven for another 15 minutes.

Serve the fish with some tomato mixture. Garnish with cilantro. Perfect side for this meal is steamed potatoes or couscous and steamed vegetables.

Additional Tips :

- To add some spice, you can add red pepper flakes or cayenne pepper to the tomato mix.
