Best Banana Bread

What do you do when you are in lockdown and have a load of over-ripe bananas? - THIS! A delicious treat for any time of year. This recipe is so delicious, that I find myself buying bananas and letting them over-ripen just to be able to make this! Amazing, most banana-ey flavour. Enjoy !

Ingredients
3 oz. unsalted butter
6 oz. caster sugar
2 medium eggs
10 oz. bananas - peeled
8 oz. all-purpose flour
3 teaspoon baking powder
2 oz. walnuts - chopped
Preheat the oven to 300°F.
In a bowl, mash the bananas. This is a great step to get the kids to help you with - my daughters' favourite part of making banana bread is "smushing" the bananas.

In another larger bowl, cream the butter and sugar very well; slowly beat in eggs, one at a time. Stir in the mashed bananas.

Sieve flour and baking powder together, and fold into banana mixture. Add walnuts and pour into a well greased and floured loaf tin.

Bake the bread for 1 1/4 hours (75 minutes). Let cool slightly before turning out, slicing and serving. The perfect mid-morning snack with your cup of coffee!
