Traditional Greek Salad

A beautifully fresh salad hailing from the Mediterranean Greek Isles. A colourful combination of chunky cucumber, bell peppers, red onion, tomatoes, black olives and creamy feta cheese. This salad is the perfect side to a summer BBQ.


 

Ingredients

  • 1/2 head Romaine lettuce

  • 2-3 ripe vine tomatoes

  • 1/2 Red onion

  • 1/2 English cucumber

  • 1/2 green bell pepper - seeds removed

  • 10-15 black or kalamata olives (large & pitted)

  • 1 cup crumbled feta cheese

  • Handful of fresh parsley

  • 6 tablespoons extra-virgin olive oil

  • Juice of 1 lemon

  • 1 tablespoon dried oregano

  • Salt and pepper to taste

 

Take the end off the head of lettuce. Chop the lettuce roughly into bite-size pieces. Chop the cucumber into quarters lengthwise and then then chop bite-size pieces. Chop the bell pepper into bite-size pieces. Cut the tomatoes into half-wedges or large chunks. Roughly chop the red onion (or thinly slice for those who are not keen on sharp onion).

Drain the olives (as per your own preference, you can leave them whole or cut them lengthwise in half). Chop roughly the parsley.


In a smaller bowl, whisk together olive oil, lemon juice and oregano.


Combine all vegetables and cheese in a bowl, season with salt and pepper, and toss with vinaigrette. Serve chilled.

 

Additional Tips :

- For an even healthier option, use fat free or fat-reduced feta cheese

- For the "olive lover", you can add finely chopped extra olives into the dressing / vinaigrette
