Proper Scrambled Eggs

Eat breakfast like a king, lunch like a prince and dinner like a pauper.
Breakfast is the more important meal of the day. When you make it properly, it makes the meal even more enjoyable. Some recipes add cream, milk, or water to the eggs - but the trick to a proper scramble is to use a knob of butter and to continuously stir them.

Ingredients
4 large eggs
1 tablespoon butter
1 tablespoon scallions (spring onions) - chopped
Salt & pepper to taste
Break the eggs into a saucepan, add the butter. Place the saucepan over a medium-high heat. Beat / mix the eggs with a soft rubber spatula. Continuously stir.

Keep mixing the eggs as they thicken. Take the saucepan off the heat briefly to make sure they do not burn. Put the pan back onto the heat and keep stirring.

Put the pan back onto the heat and keep stirring. Be careful not to over cook or burn the eggs. Keep stirring until they are thicker. Season with salt and pepper.

Take the saucepan off the heat, and stir in the scallions to make sure they are evenly distributed throughout the eggs. Serve immediately and garnish with cracked black pepper.
